Pineapple and Bacon Cauliflower Fried Rice

How to make it

  1. Cut the cauliflower into 4 sections. Finely dice the flower parts, or grate with a grater into ‘rice’.

  2. Heat the wok over medium heat, sauté the diced onion, minced garlic and minced ginger until fragrant.

  3. Add the cauliflower rice, seasoning mix and water and stir fry for 5 minutes.

  4. Add the pineapple, cashew, tomato and basil and stir fry for 2 minutes. Serve on a plate.
